Easy Gluten-free, Vegan Chocolate Chip Cookies

I love cookies.  But I also love avoiding animal products and inflammatory ingredients like wheat flour.  So what’s a girl to do when she’s craving chocolate chip cookies?

With just seven ingredients and about twenty minutes of kitchen time, you can enjoy soft, chewy, cookies with just the right amount of sweetness.

2 1/2 cups almond flour
1/2 tsp baking soda
1/2 tsp Celtic sea salt or Pink Himalayan
1/2 cup raw agave nectar
1/2 cup grape seed oil or melted Earth Balance vegan buttery stick
1 Tbsp vanilla
Heaping 1/2 cup vegan chocolate chips

Mix all ingredients together. Make sure the “butter” isn’t hot, or you will melt the chocolate chips!

Use a spoonful of dough for each cookie, as smaller cookies work better. Place on greased or parchment lined cookie sheet.

Bake at 350 degrees for about 7-10 minutes.
